Special Weekends at the Gascony Cookery School
7th October 2011 – Just Desserts
A weekend dedicated to preparing (and enjoying) French desserts.  If you go weak at the knees for an uncracked crème brûlée or crave the light fluffiness of a French mousse au chocolat then this weekend cookery course which pays homage to the finest desserts that French cuisine has to offer is definitely for you.
Employing a mixture of patisserie skills, knife skills, sauce making, icing, caramalizing, piping and general dessert decorating and presentation this course covers a range of different desserts including, tarte aux pommes, crème brûlée, croquembouche, la pièce montée (the traditional French wedding cake), mousse au chocolate and tarte au citron.  Each chef has their specialities and they will take it in turns to instruct you in the best ways to prepare both simple and more complex French desserts, all the while imparting their hard-earned secrets and, in Bernard’s case, family recipes along the way.
You will be accommodated for the weekend by chef David and his wife Vikki in their beautifully furnished chambres d’hotes and you will dine alternately in Bernard’s restaurant and at David’s table d’hote.  The perfect weekend for those wishing to specialise in French dessert making or for those who simply wish to indulge themselves in the sweet dishes that have become associated the world over with French haute cuisine, the “Just Desserts” weekend is charged at the same rate as the weekend cookery course and the same arrival and departure days apply.

The Garlic Festival is a favourite of David, Vikki and their family so if you book your week-longcookery course or weekend course around this date they will be sure to accompany you to this truly French expression of joie de vivre!

Le Vendange is a cherished local tradition that has been honoured annually in Gramont for just over a hundred years.  After the ceremonial handpicking of the grapes everybody congregates in the restaurant of Gascony Cookery School chef Bernard to celebrate the new harvest with a traditional Gascon lunch accompanied by that delicious local wine!

November 2011 - Specialist charcuterie week

Brand new to The Gascony Cookery School this year we are proud to present a new specialist week for our guests. The origin of the word “charcuterie” was formed from the word “chair-cuitier” meaning the person who cooked (cuit) the meat or flesh (chair). In France today, the charcutier is primarily concerned with the preparation and sale of cooked and raw pork products.

Incorporated within our normal cookery school itinerary you will visit the village of Urdens over three days to watch the traditional preparation of charcuterie, a skill which is slowly dying out throughout France. You will see how every part of the carcass is used including the preparation of saucisson, blood sausage, ham, pork chops and belly. This truly is an experience you will never forget.

If this sounds of interest to you or if you would like a full itinerary for this specialist week please let us know.
