The Gascony Cookery School – an overview

Dave and Vikki left the UK for a life of food and countryside in the heart of Gascony, France, back in 2002. Since then they haven’t looked back. In the UK Dave was a professional Chef for French cuisine, and it was through this that the two of them fell in love with the French approach to dining.

Dave and Vikki choose the Gascony area of France for the gentle landscapes, its slow pace of life and of course, its great food. Originally they planned to establish a chambres d’hotes and table d’hotes within the old farmhouse they had converted. However, they soon became friendly with local chef Bernard, who had been running his own successful restaurant for over 25 years in Gramont. David and Bernard soon gelled over their shared love of food and culinary experience and decided to set up a cookery school, combining their experience from both sides of the channel. The goal of the school was to share their love and passion for French food and make cookery accessible and enjoyable to all.

Often described as the French version of Tuscany, Gascony is the perfect setting for anyone looking to discover the delights of the French cuisine. One of the main reasons Dave and Vikki were drawn towards Gascony was due to its gourmet specialities. In addition to its most famous product Armagnac, the local brandy, and its distinctive wines such as Côtes-de-Gascogne, Madiran, or Pacherenc-du-Vic-Bilh, Gascony is noted for its poultry, including some of the best free-range chicken in France. The cuisine of Gascony has often been described as one of the pillars of French food, often described as the richest menu in France, probably because of the tradition to cook everything in duck fat.

The school offers students a hands on and comprehensive approach to the French way of cooking. Set within the rural and quaint setting of the South West of France, it really is an opportunity for students to get away from it all and emerge themselves in the French culture and way of life. Surrounded by rolling hills and peace and quiet, Gascony must be one of the most perfect locations in Europe. On arrival, guests will be shown to their bedrooms within the converted old farmhouse. Many of the bedrooms have views over the countryside and as well as access to our three different terraces where we urge you to make yourself at home and relax. The first evening involves a four-course meal made by chefs David and Bernard as you settle in and meet the other guests. Here we will discuss together what will be covered during your time at the school and how you will learn to cook food similar to the feast you will be eating.
