France has a longstanding reputation for its gastronomic delights and as a result, most cookery training schools put an emphasis on teaching the classical French culinary skills. French cooking is based on basic concepts that have been honed over centuries. Fine ingredients, full-bodied sauces and expert cuts are key in French training and sound knowledge in the culinary field is needed to use them expertly along with all the basic skills.

Good chefs will have had exposure to local cuisine, culture and cooking techniques specific to that area. So, it goes without saying that total immersion is key when you start to learn French cooking.
