The Gascony Cookery School is please to announce completely new for 2016 our Fish and Crustacean
Six Day Cookery Course.

You will arrive late afternoon/early evening on Sunday 18th September for 6 days of hands on tuition in this a completely new course designed by Chefs David Chance & Bernard Corbiere. You will  focus on developing your skills and cooking some outstanding fish and crustacean recipes, whilst in the stunning location of the Gascony Cookery School, Gramont in the South West of France

Monday
The day will start with a quick overview of the course and then:

AM with Chef David

·         Mussel soup with infused saffron

·         Stuffed squid with pea and tomato risotto

·         Almond and orange cake

PM with Chef Bernard

·         Rillettes of trout

·         Lobster a l’americaine

·         Clafoutis

Tuesday

The morning will start with a visit to the market in Valence d’Agen to pick shop for more fresh produce

PM with Chef David

·         Scallop quenelles

·         Sea bass with parsnip purée

·         Walnut and honey tart

Wednesday

AM with Chef David

·         Crab tartlets

·         Red mullet with gratin of  Asparagus

·         Millefeuille aux pommes

PM with Chef Bernard

·         Salmon seche

·         Trout with three sauces, i.e. Amande, Hollandaise, Beurre Manie

·         Piece montee

Thursday

AM with Bernard

·         Bouillabaisse

·         Glace praline

PM
